Lemonade Granita and Pink Champagne Fizz


It's good to get a little tipsy every once in a while, you know? Lose your inhibitions, get giddy, let loose and push away whatever is getting you down. Honestly? Sounds like every night I go out! What?! I love a good time with friends.

If you're looking to do this this weekend, or if you happen to be hosting a 4th of July BBQ or staying in to watch the tennis at Wimbledon, then this drink is for you. 

It consists of lemonade granita, pink champagne and fresh basil. Granita is an icy Italian dessert-somewhere between sorbet and shaved ice. The granita sits in the bottom of the glass with a couple of basil leaves and the pink Champagne is poured over. The granita has two uses: it keeps the drink perfectly chilled in this heat and gives it a very slight lemon flavor. If you want more of a lemon flavor-squeeze in a wedge of lemon and garnish it with a lemon twist. 


There are only three ingredients in this drink. Which makes it super easy to make. It's pink too-so that's a thing that already makes it a winner. 

Who doesn't love pink drinks?! 
I cheated with one of the ingredients. Instead of making a granita from scratch with fresh lemon juice, sugar and water. I bought a bottle of sparkling lemonade and applied the same method of stirring the freezing liquid with a fork every half hour for 4 hours until the granita texture is achieved. 

I actually didn't even buy the lemonade. My cousin brought to our house. So, on my part this might be the laziest blog post ever! BUT, I was inspired by the lemonade to make a granita! 

That counts for something right?

I love fresh herbs in my drinks. I went for basil this time. It gives the drink a bright lift and the green against the pink champagne is very very pleasing to the eye. 

Have you seen this Pear Vodka and Thyme Lemonade? It's got a thyme simple syrup in it. It's really good and would definitely keep you cool in the garden this summer. 

If you want to keep cool this weekend with a non-alcoholic drink here's a Homemade Cloudy Lemonade. Apparently I have a thing for lemonades??

Pour the sparkling lemonade into a wide freezer safe dish.

Place in the freezer for 30 minutes.


Remove from the freezer and stir through with a fork to break up any ice crystals.

Place back in the freezer and continue to do this every 30 minutes for 4 hours until the liquid is all frozen and 'fluffy'. 


When ready to serve, spoon 2 heaped tablespoon of granita into small glasses.

Lightly scrunch up a few basil leaves and place in on top.


Top with pink champagne and enjoy! 


Recipe, makes 6-10 drinks, depending on how large you make them!

750ml Sparkling Lemonade
750ml Bottle Pink Champagne
Bunch Basil Leaves
