Peanut Butter Chocolate Chip Pancakes


Monday got to me. Several things got the better of me: a dead car battery, no SD card for my camera and an unbelievably rude bus driver. I've been off work for the last two weeks and I believe my lack of social interaction is getting to me! Can you say cabin fever?

The day started off with an MRI scan-that sounds way worse than it actually is! I fell and hurt my back while I was in Edinburgh the week before last. The worst part about the scan? I was listening to the radio through headphones, and Queen's Bohemian Rhapsody came on. I couldn't move, I couldn't sing along and I couldn't go all Wayne's World while lying there. Bummer man. 


What makes all your frustrations disappear? Pancakes. Soft, fluffy pancakes. Pancakes that are studded with milk chocolate chips and scented with peanut butter. Pancakes that are stacked and topped with a blob of Nutella, a drizzling of golden syrup and a crowning of chopped toasted hazelnuts.

Tomato Braised Chicken



Hey there my lovely. As you are reading this, I am in Edinburgh. My sister and I decided to take a short city break. It's super cheap to fly from Ireland to London, Edinburgh or Paris.  Why not treat ourselves. I had a really busy Christmas and I've never been to Edinburgh. So, why the hell not?

This post was written before I left for Edinburgh. I hope I'm having fun, I assume I'm heaving fun. Let's be serious, I'm having all of the fun! I'll tell ya'll about my trip next week. 


Trip talk next week, food talk this week. Tomato Braised Chicken talk to be exact. It's going to be a lovely conversation, that I can guarantee. 

I don't think I've ever met someone who doesn't like chicken in some shape or form.  Except for the obvious vegetarians and vegans in all of our lives. Chicken is so versatile and that is why I love it. If you can cook a bird well, you're going places….You're going to the kitchen to cook some chicken!

Yoghurt Cake with a Blood Orange Glaze


It's been over a month, AN ENTIRE MONTH, since I last updated my blog. Bad form, Holly. I'm back now, let's say it was an extended Christmas break! Let's put the lack in blogging behind us and forget about it. 


Where have I been? Eh, around. Mainly working and hanging out with new friends. It's been fun, a lot of fun. Now, it's time to fit my blogging back into my life. I've missed it. 


I'm back and I'm back with cake. Like me again? A delicious moist yoghurt cake, flavoured delicately with lemon and smothered with a blood orange glaze. Not too shabby, eh?
