So this is a little awkward. I made this mixed berry, caramel, salted peanut sundae last weekend when the weather was summery. Maybe I didn't post it earlier because I wanted to have a back log of summer worthy recipes. A little premature on my part me thinks! I dunno, maybe I thought that after that 1 week of glorious weather we had we were in for a good run with the big ole ball of sunshine in the sky! I was most definitely put in my place by mother nature. Darn it.
Ok, so what if it's like the depths of winter outside. No biggie. We'll get over the dreadful weather together with some ice-cream. Yes, I understand that saying this may sound like a contradiction, but, I can confirm ice-cream solves everything.
This sundae is a beautiful marriage of the salty and sweet. The sweet mixed berry sauce over luscious ice-cream with crunchy toasted peanuts is out of this world. Seriously, I kid you not. Wait, now that I think about it, this sundae is like a PB&J-peanut butter and jelly sandwich a la mode.
So if you're in Ireland get the ingredients together, wrap up on the sofa in some snugglies and dive into this mixed berry, caramel, salted peanut sundae in front of the fire....in June. Irish weather must be so embarrassed for itself. If you are lucky and happen to be in some country that is currently being drenched in sunshine rather than rain, snugglies and fire are not applicable!

Mixed berries, lemon juice and caster sugar happy out in a pot.
Happier now since they have been cooked down into a glorious sauce. Their purpose is to make this ice-cream sundae stellar!
Pour mixed berry sauce through a sieve until only the pulp is left.
Sundae fixings: caramel ice-cream, mixed berry sauce and toasted salted peanuts.
Mixed berry sauce and toasted salted peanuts? This is getting out of control!!
Step 1: scoop of caramel ice-cream...
Step 2: mixed berry sauce...
Step 3: toasted salted peanuts.
Step 4: repeat steps 1-3 as many times as you feel is appropriate!
I restrained myself and stopped after repeating steps 1-3 once. It's totally your call. Repeat steps 1-3 50 times if it grabs your fancy, just don't forget to adjust the recipe accordingly!

Recipe, makes 4 Sundaes
2 Cups Mixed Berries, frozen
1/3 Cup Caster Sugar
1/2 Lemon, juiced
1 Litre Caramel Ice-Cream, 2 scoops per person
100g Salted Peanuts, toasted.
Place mixed berries, sugar and lemon zest into a pot.
Bring to the boil over a medium heat.
Reduce heat and simmer over a low heat, stirring occasional, until the berries are completely thawed, squishy and slightly reduced. Approx 10-15 minutes.
Work through a sieve set over a bowl.
Push the sauce with the back of a ladle until only a thick pulp is left.
Allow the sauce to cool slightly.
Add the peanuts to a small dry frying pan and toast over a low heat until slightly toasted.
Allow to cool.
Once the sauce and peanuts are cooled begin assembling your sundae!!
Looks absolutely divine! Have printed and will keep aside for the (next?) sunny summers day!!
